PREPARATION TIPS: boil for 1 hour and a half in unsalted water and then place in a preheated oven at 180 degrees for 1 hour (this method ensures good moisture in the shank)
PRODUCTION: Made with selected pork shanks, they are salted and flavoured and left to rest for 5-6 days. Once this process is complete, they are hung and cooked at a low temperature and smoked with aromatic, non-resinous wood and juniper berries.
