PREPARATION TIPS: This typical product can be baked in the oven at 180 degrees for 40 minutes or cut into pieces and grilled. It can also be a perfect ingredient for barley soups or broth.
PRODUCTION: Cured meat made with selected pork bellies, carefully trimmed, then salted and flavoured, left to rest for 5-6 days. Once this process is complete, they are hung and cooked at a low temperature and smoked with aromatic, non-resinous wood and juniper berries.
