PRODUCTION: Cured meat produced with selected pork legs and pancetta, after which they are deboned, salted and flavoured, left to rest for 15-20 days, after which they are hung and smoked with aromatic, non-resinous wood and juniper berries, then aged for 7.5-8 months.
INGREDIENTS: pork belly, pork leg, salt, spices, sucrose. PRESERVATIVES: sodium nitrite and natural smoke.
