PREPARATION TIPS: This typical product is browned in a pan for 2 minutes per side and served with sauerkraut, or cut into cubes, making it a perfect ingredient for barley soups or risotto.
PRODUCTION: Cured meat made with selected pork loins, carefully trimmed, then salted and flavoured, left to rest for 5-6 days. Once this process is complete, they are hung and cooked at a low temperature and smoked with aromatic, non-resinous wood and juniper berries.
